Peach Yogurt Cake: A Summer Delight!

This Peach Yogurt Cake combines the tangy richness of Greek yogurt with the sweetness of fresh peaches, all topped with a hint of lemon zest. It's an easy-to-make dessert that will impress your family and friends. Let’s get baking!




Ingredients

  • Dry Ingredients:

  • 1 and 1/2 cups (188g) all-purpose flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • Wet Ingredients:

  • 1/2 cup (120ml) oil (olive oil, vegetable oil, or melted coconut oil)

  • 2/3 cup (133g) granulated sugar, plus 1 tablespoon for the peaches

  • 2 large eggs, at room temperature

  • 3/4 cup (180g) plain Greek yogurt, at room temperature

  • 1 teaspoon pure vanilla extract

  • 1 tablespoon lemon juice

  • 1 teaspoon lemon zest

  • Peach Topping:

  • 2 cups (about 320g) sliced fresh peaches (peeled or unpeeled, about 3 peaches)

  • Optional: 1/2 teaspoon ground cinnamon

  • Optional: 1 tablespoon of granulated sugar

  • Optional: Confectioners’ sugar for topping



Instructions

1. Preheat and Prep:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with unsalted butter.

2. Mix Dry Ingredients:

  1. Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3. Mix Wet Ingredients:

  1. Whisk Wet Ingredients: In a large bowl, whisk together the oil, 2/3 cup of granulated sugar, eggs, Greek yogurt, vanilla extract, almond extract, lemon juice, and lemon zest until smooth and well combined.

4. Combine Wet and Dry Ingredients:

  1. Mix Together: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

5. Prepare the Peaches:

  1. Slice Peaches: Slice the peaches and toss them with 1 tablespoon of granulated sugar. Set aside half of the peaches.

  2. Add Cinnamon: After you set aside half of the sugar coated peaches, add your 1/2 teaspoon of cinnamon to the remaining half of sugar peaches. These are the peaches that will be used on top of the first layer of batter.


6. Assemble the Cake:

  1. Pour 1/2 Batter: Pour the batter into the prepared cake pan and spread it evenly.

    1. Add Cinnamon Sugar Peaches: Pour half of the batter into the pan first, layering with the cinnamon sugar peaches.

  2. Pour Second 1/2 Batter: Arrange the sliced peaches on top of the batter. If using, sprinkle the ground cinnamon over the peaches.

    1. Add Sugar Peaches: Pour the second half of the batter on top of the cinnamon sugar peaches and top with an even layer of the sugar peaches.

7. Bake the Cake:

  1. Bake: Bake for 50 minutes, or until a toothpick inserted into the center comes out clean. If the top begins to brown too quickly, cover it loosely with aluminum foil.

8. Cool and Serve:

  1. Cool: Allow the cake to cool in the pan 15-20 minutes, then transfer it to a wire rack to cool completely.

  2. Optional Topping: Before serving, you can dust the cake with confectioners’ sugar for a decorative touch. For additional toppings, consider: whipped cream or vanilla ice cream.
